Peanuts are primarily composed of fat, accounting for 40-50% of their content. Peanut oil contains glycerides of various saturated and unsaturated fatty acids.
Peanut oil also contains oil-soluble vitamins, with vitamin E being the most prominent. Vitamin E is essential for the synthesis of sex hormones and has anti-aging properties.
Two saturated fatty acids found in peanut oil are arachidic acid (C20) and lignoceric acid (C24), which are also present in cocoa butter and cow's milk. These saturated fatty acids are not harmful to the heart.
Additionally, peanuts contain vitamin B2, vitamin B6, magnesium, manganese, iron, copper, phosphorus, potassium, zinc, selenium, calcium, and most importantly, folate, which has a beneficial effect on brain health.
