Bertani produces Recioto wines using two types of grapes grown in the Valpatena hills. The grapes are dried in the sun and then further dried on traditional bamboo sticks for 3 months.
Recioto has a strong yet smooth flavor with hints of walnut, making it a unique tasting wine. It has an intense red color and a moderate level of acidity.
Grape varieties and vineyards: 80% Corvina Veronese grapes and 20% Rondinella grapes, planted in rows and using the Guyot training system.
Production area: The hills of Valpatena, north of Verona, with special soil composition - limestone in the east and iron-rich clay in the west.
Production process: The grapes are hand-harvested at the end of September. After careful selection, they are taken to drying rooms and placed on bamboo shelves for 150 days. The initial fermentation occurs at a low temperature of 4-5 degrees Celsius, then reaches 18 degrees Celsius and is stopped before all the sugar in the grapes is converted into alcohol.
Flavor: The wine has a dark ruby red color and a pronounced aroma of plum, cherry, raspberry, etc. It has a moderate sugar content, resulting in a long-lasting flavor of forest fruits, chocolate, and licorice.
Usage: This wine pairs well with cakes, jam, and cheese.
